We rely on our senses
The wine harvest begins the moment we believe the grapes have ripened. We rely more on our own senses than laboratory tests. We taste the grapes several times and once the seeds have become hard, woody and toasted and the grapes have a full-bodied taste of sun and pleasure, that’s when we start the harvest
We pick our grapes by hand, selected each bunch on the vine as we harvest, removing any parts which are unripe or not healthy looking. They are then taken to the wine-making cellar as quickly as possible, no later than one hour after being picked to ensure they do not deteriorate.
